Best Knife Sharpener That You Use?

Well, I bought a knife sharpener off of Amazon that had 3300+ favorable reviews and got it on Monday. Started with one of my hunting knives that was needing sharpened. Gave it the slicing paper challenge before and after. Was sharper before I used the sharpener I bought. The one I bought is called the X1 Advanced Knife Sharpener. It's the type that has 2 arms mounted in a frame and you draw the blade between the honing blades to sharpen the knife. Watched the instructional video 3 times and it still dulled the blade. Besides using a whetstone that I'm not good at, WHAT ARE Y'ALLS RECOMENDATIONS?

For quick sharpening on kitchen knives I do 30 strokes on a rod. If I really want my knives sharp then I use my wicked edge. I had a worksharp that broke on me, but those do a good job too

I use a worksharp that is great once you get the hang of it. Have used a Lansky rod system in the past that was good, too.
It sounds like what you tried was changing the angle of your edge. Not a bad thing, but if you stop halfway through, it will definitely be duller than when you started. Maybe give it more time? Or it could just be junk. I'm not familiar with that sharpener.

i've tried several different things, didn't care for them,,,, i free hand sharpen my knives no secret, find your angle and hold it all the way through

I suck at hand sharpening knives. Worksharp is the ticket IMO.

That guy at the gun show. I take him a few every time I go to the show and for about $5-$7.00 they're like a scalpel, for a very long time.
An unethical shot is one you take, that you know you shouldn't.

Wicked Edge
Perfect edge geometry. Set the angle for the job of the knife.
Will sharpen the hardest of steels, and I carry M390 on a daily basis.
Does not heat up (anneal) and soften the steel.
Doesn't take long to get the muscle memory and you end up with scary sharp knives. Expensive tool, but will be worth it in the long run.

Using whetstones to sharpen knives takes some practice, but it’s worth the time to learn. But, if a fellow doesn’t have the right stones and use them in the right succession, practice won’t make perfect.

I started off with an edgepro apex before i learned to freehand on my grinder...its a good system!

Lansky you sharpen one side at a time. Wicked Edge, both sides simultaneously. On edges that are very far gone, I start at 100 grit. It sounds like he'll, because it is moving lots of metal. But it'll get you there quicker. Then 200 grit, then 400 grit, then 600 grit. My daily carry doesn't need sharpening very often, because it is very hard steel. So I hit it with 400 then 600 grit, and it is over quickly. I can go all the way past 2000 grit, but I believe the micro serrations left behind on the 600 grit cut better. Going to 2000 grit ceramic would be if I start making straight razors.

I have used many of the sharpeners mentioned. With that said, for a whole drawer of steak knives at your house or at another location, where they are not collectors items or really expensive, and you need to put a 15 degree edge on lightning fast, that will shave hair, I whip out a electric diamond wheel model and finish quickly. I’ve found that my farm knife gets the crap beat out of it, and I can put a razor edge in 2 minutes. And again, not for my prize knives, but for hair splitting work/steak knives, you can’t beat it.

I use the Lansky, which is the same basic premise, but about 10% of the price. Yes, it makes scary sharp knives, and I recommend the lansky to everyone. I just can't rationalize the $500 bite for the wicked edge. I can see how It's better. Looks easier to set up, bigger stones, and like Jason said, you can sharpen both sides at a time. I just don't see it as 90% better when the lansky is only $50.00.

Diamond plates are definitely nice but you can get 50 dollars worth of stones and have a razor sharp blade. The india stone is tried and true and about 20 dollars. A king 1000 stone is about another 20. Then get a leather strop.

The diamond plates were bought to use sharpening woodworking chisels and handplane blades. They let me sharpen much faster than the stones I used before. I do still use the black Hard Arkansas stone next to last, followed by the leather strop.
I learned the technique at a woodworking school.
The diamond plates just let me sharpen faster, and they never clog up with swarf.
