Wife wanted and had cereal, not me. I could not make my mind up on what to cook, had the choices of either bacon, sausage, corned beef hash or?
There is some leftover pot roast meat and potato skins in the fridge that I could not take my mind off so there I went.
It was pretty dang good and will improve on the next go around.

Should have shredded the roast instead of slicing it before heating it up in the skillet and added pepper. The Jalapenos slices made the roast more flavorful.



Bet there are some really tasty things you can do with thin sliced potato skins crisped in the oven? Blank probably knows a few.



Put Mexican style blended cheese & Tabasco sauce on the eggs. Should have added a little more cheese.



Added the meat & potato skins on with a little more cheese.



Topped with a little Hot Pace Picante sauce. Another hindsight moment, a couple of slices of fresh Avocado would have been nice.

Everybody loves potato skins, with cheese and green onions/jalepenos/hot sauce. This was a new one on me, with peelings and it is wonderful! The wife watches Ree Drummond when she cooks, and I caught this one time. They were amazing, and so easy to make. I'll have to do them again soon.
