I know they have been posted but it’s been a while. Doing this pork butt ham using Dinks method got me to thinking about other stuff that I wanted to try by never got around to it.

Can someone please share these again (and any others you think I would like to try).

Kraut is easy
Had to help my granny make it for a lot of years
We always used a crockery butter churn she had.
Something non metallic is needed

Get a box of pickling salt
Slice your cabbage/cabbages into thin ribbons
In your crock alternate layers of cabbage and
salt
Needs to be weighted
We always used a clean plate and a new clean brick
she got somewhere
We covered the mess with a clean towel and tied a
string around it to hold it
Let it work.
When it was ready, she had sampled a good bit
along the way, and put the rest up in jars

I usually buy whatever i want since nobody else
eats it. Myself, I eat boiled cabbage and cornbread
if I obtain a head for any reason

Don't forget the caraway seeds. Work the cabbage and salt hard with your hands before you pack in the jars.

My wife makes a cabbage casserole. It is like a sliced potato casserole with cheese, a white sauce and sliced cabbage. No recipe, it is different every time. Some she uses mushroom soup, instead of the white sauce. Sometimes she adds broccoli or cauliflower.
