Nothing wrong with a hotdog. I always put a few on the grill for the children when smoking a brisket. Guess what?

These pretty much Rock. Specialy if you use some high quality smoked or brisket cooked in Claude's!

Holiday party coming up and I need to take a finger food type dish. There will be lots of cheese trays, veggies, sausage platters and jalapeno poppers.
I'm thinking of making Mexican cornbread mini muffins. Good chance someone there has never had corn bread, yes it may happen.
I'm going to use a Corn Kit Honey sweet mix but should I use roasted Big Jim chilis or jalapenos? I also like sharp cheddar, would that work or should I go with a more mild, easy melting mix of cheese ?
Any other finger food ideas that don't have to be kept hot, something kind of meaty perhaps ?
Pics are appreciated of any other ideas. And let's see your party favs even if they aren't finger food types.

My wife just calls them yummies. I don't have a name for them, so yummies has stuck. Always a hit. Crumble and brown breakfast sausage. Mix in one block of cream cheese, and I like to add diced jalapeños. Cut a roll of crescent ro dough into squares and wrap around the sausage/cheese mixture to make little rolls. You will need 3 tubes of dough. Bake approximately 20 mins.

Pickle rolls! It doesn't sound like it works, but it really does.
Get a jar of whole dill pickles, a block of cream cheese, and a pack of lunch meat ham.
Leave the cream cheese on the counter for a few hours to soften up.
Spread the ham slices with cream cheese then wrap the pickles in them. (It helps to chop off the ends of the pickles first)
Put them in the fridge overnight or for a few hours and then chop into slices (crossways)
Plate up and put a toothpick in each and have a bottle of Tabasco handy.

Big Jims chopped for the win. Just the right amount of spiciness but it wont hurt anyone. Print off the recipe cause you're gonna get asked for it a lot.

Made a test batch. Turned out great, spouse was really surprised how good they were. I'm going to make a bunch with Big Jim chiles only and a bunch with sausage, BJ chiles and cheese. The BJ only have a great chile taste and they have some good heat. The breakfast sausage added makes them a little bit meaty but still good chile flavor. I may cut back on the chiles a bit, they really stand out in the overall flavor and having some good heat I can cut back and still get the flavor without a lot of heat. Spouse says they are great with the Anasazi beans, adds some kick with the cornbread. Maybe I won't cut the chiles back after all.

LaCostena japs from the jar chopped fairly well. Not too hot for newbies, but a great flavor.

My taste testers say just BJ chiles and cornbread, no cheese or sausage. I'll whip up some honey butter to go with them.
