Heart, fajitas (skirt steak) and liver from a young deer done properly with a little salsita, makes FANTASTIC tacos on the disco with some onions/bell peppers/garlic & butter. Tender and a mouth punch full of flavor.

I sliced and skillet cooked a liver once. It was pretty tough compared to beef liver.
