Going to try my hand at making my own sausage.

I like old school, german style.
Course ground, spicy
jalapeno / cheese

Want to make it raw and put on smoker when ready to eat

non-iodized salt, coarse ground pepper, red pepper, garlic & mono-cure. believe me when I say this is a German style mix of ingredients. that's it.

yeah, it shouldn't be that complicated

Do you need the cure if it is going to be vacuum sealed and frozen and then cooked on the smoker?


I would just as soon not have any preservatives if possible

No, if not drying and kept frozen. We just never do that cuz we use one recipe for pan, dried and fresh. The amount of mono cure per 40 pounds is really small.

60 deer X 40 pork if using trimmed picnic pork or feral hog. 50 x 50 if mixing with Boston butts.

Sausage making varies by regions, countries and individual tastes. I suggest t=when trying a recipe to make up a small batch and try it. One version of sausage can be a little different than another version of sausage with the same name.

per 40 lbs of meat -

1 lb non-iodized salt
1/4 lb coarse black pepper
1 tablespoon red pepper
2 teaspoons of salt petre or adequate amount of monocure
4 or 5 chopped garlic cloves

That's the recipe. The award winning dried sausage recipe adds a little less than a 1/2 table spoon of red pepper (no more). I like the pop as well as many of the people on this forum who have had a link. Find a way to convert the chopped garlic gloves into garlic powder and you will be fine.

Mix 50/50 if using boston butts or feral hog. 60 venison and 40 pork if using trimmed picnic pork which is typically how we work it. Breakfast sausage does not get smoked. Fresh sausage gets smoked once and dried sausage twice.

Same list of ingredients as my mom's family sausage recipe. It was written down in terms of table and teaspoons only though which was a major pain in the azz!

Hang sausage links on rods in a small room - typically the smoke house. Do not and I repeat do not allow the links to touch. Flow of air is all important. if not climate controlled (ours is w/a window unit), you must be ever so mindful of the weather and especially so at the beginning of the dry out process. The first two days get the smoke. Set it up smoke it, and be done with it - doesn't need continual smoke for two days. Depending on the conditions, about twelve days for the drying.

We seal ours up when just a little soft and not completely hard. Pull the bags outta the freezer and it can be instantly consumed, but it is typically texture perfect later in the day or the next morning.

Tip - if in the course of drying, you get a lil' mold, simply wipe it off with vinegar. With the window unit, we never really have to worry about this.

I never remember bad sausage drying weather as a kid growing up. Either the weather went to pot or my Opie picked the weekends more than what was free and available. Wish I had his old smoke house!

I remember if it turned warm and humid we would have to wipe off the sausage with vinegar. Sometimes we would have to do it more than once if stayed humid for any length of time. Like right now would not be ideal weather for drying sausage.
