Prines BBQ in Wichita Falls has a great pimiento cheese, try in on Fritos, you will come back. They also have smoked baloney.

Looks like I’m in the minority, but I can’t stand the stuff. I used to be same way, until I found someone who made a good one. I like it with chopped jalapeños and quality sharp cheese.

My moms recipe.
2 cups grated cheese ( I like sharp cheese) Miracle Whip to proper consistency Diced pimento's to taste (I used the whole jar.) Salt and Pepper. 1 tea spoon vinegar. 1 teaspoon sugar. I like it with good pickled Jalapeno's but I put them on the side. Not everybody likes it that way.
Served preferably on thick cut homemade sourdough bread. Always a favorite as a kid and still is. I haven't found a store bought brand I like yet, they all use too much sugar. Had me until I saw Miracle Whip.

Stay away from HEB pimento cheese, the cheese is gritty, I have to try making my owns now

I plan to buy store bought and add a few things such a sharp cheddar. This is what I've done lately and it's good. I had a friend tell me that he adds cream cheese to store bought. I didn't think to ask how that grating process went. I would think you would have to have it almost frozen. I can't grate Velveeta without having a gooey mess. I've always bought Prices. However, lately it's Braums. It is cheesier.

Prices is what I got today. Prices is really good PC. I sold some private label pimento cheese when I worked for Winn Dixie and Brookshire`s and neither were even close to Prices Pimento cheese. They even had one with Jalapeno`s.
