I do this with venison as well, but pork is my second favorite when I'm out of deer meat. Chicken comes out ok also, but dry.

Lightly dust chops with flour, season with salt, pepper, garlic powder. Brown on medium high heat in a large cast iron skillet. Remove once browned and set aside (will be raw inside). Add carrots, small potatoes, whatever you want, loads of fresh garlic, rosemary and brown veggies in drippings. Deglaze skillet with beef or pork stock. Cover, place in a 400 degree oven, checking often and adding stock as needed. Remove from oven when veggies are 99% cooked. Add your chops back into the stew mixture and place uncovered in the oven. Finish for 8-10 minutes. Gravy will reduce in pan. Serve.

doing close to that tonight after seeing this thread, the wife agreed this is what's for dinner

Like I posted earlier this thread got me wanting something like this and well presentation not as good we liked it. With the oven on and us needing more beer bread added that and corn bread. Wife liked it .
