To me, steak is all about proper meat choice. The finer the meat, the less I'm seasoning things. Cheap sirloin will normally get a light coating of grillmates southwest seasoning. New York strip and T-bone (standard grade) will get sea salt, crushed pepper, garlic powder and some onion powder.

ANYTHING Prime or better is salt and pepper only.

All my steaks are cooked on the pit (400-425 degrees) 3-4 per side, pull, rest for 5 minutes. Eat. Rare if steam is prime, medium rare if standard cut.

get the coals white hot. salt and pepper only. 15 sec's each side, just enough to get grill marks on it.

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

If you haven't tried this, give it a shot. I love grilling my own steaks and trying different marinades and 99% of the time when I try a steak at a restraunt I end up getting irritated that I paid money for a steak that I could do better at home.
No marinades, just a good cut of meat and some kosher salt and pepper. I may never grill a steak again. It did smoke my house up pretty good tho. I would recomend that after the second steak, grab a handfull of paper towels, pour some kosher salt in the pan and clean out the excess grease before continuing. At those kind of temps, the oil gets black and tastes nasty pretty quick.


Did this tonight. By far the juiciest steak I have ever had.

Glad you gave it a try. I didn't think I would ever do a steak in a skillet but I was pleasantly surprised. This is the way we do our steaks 90% of the time. It took a few experiments with time and temperature to get em cooked just right but now they all come out good.

I do mine in a black iron skillet just like the other guys mentioned. Instead of Kosher salt, try French Grey Sea Salt on Filets. Much more expensive than Kosher, but makes a big difference in my opinion. The Filets will come out better than any of the primo steak houses around.

I haven't grilled a steak since I tried the black iron/broiler method, but if I was doing steaks for a big crowd, they'd go on the pit because it would take too long to do them 2 at a time.

Anyone doing Alton Brown's recipe needs to use safflower oil otherwise canola oil can burn and make your steak taste like deer turds.

Head Country (Ponca City, Ok) has a dry seasoning that ROCKS!!I have used as a rub on ribs/brisket or on steaks and their BBQ sauce is great on Ribs and such. Once I found it haven't looked back. Forgot to add, I do sear on a cast iron grid at about 500 degrees then move up and roast the final bitat 375.

I guess the only difference is that I put my skillet on the gas grill outside. I get a chunk of wood burning on one end of the gas grill. After it gets smoking I put the meat on the hot cast iron on the other end and close the lid.

Even though the steak cooks pretty fast there is still just the slightest smoke flavoring.

I do this with pork and burgers as well. Buy a pork loin and cut thick chops from it. That is good stuff there.

I've never had a problem with Canola oil...The smoke point of canola is around 468 degrees. You'd have to cook the steak a lot longer than the recommended time to achieve that (maybe an issue if you eat your steak well done, but then what's the point anyway because it already tastes like deer turds)

You MUST start with a 1" to 1.5" T-Bone. Lightly sprinkle with Williams Steak Seasoning and Weber Chicago Steak Seasoning. The Weber contains sea salt and mostly course ground pepper. Rub/pat in. If you don't have a VERY hot, all white charcoal fire with a few water soaked mesquite chips, forget it. 4 minutes on the first side and three on the other for a medium rare piece of heaven. A pat of real butter, touch of garlic salt when left resting for 5 minutes if desired. Salad, loaded baked potato, Texas toast to complete.

With all do respect, if a steak isn't done over an open flame it isn't gunna be worth eating in my humble opinion. I use the firebox on my smoker, with real oak and mesquite to get the best flavor. I grill'em on either side till mine is medium rare using the good ole poke test and then get them inside. I have found that it's always best to let them set for a couple of minutes before serving them because the steak continues to cook on its own and it allows time for the juices to start flowing. You won't find a bottle of steak sauce anywhere in my house either.

God meant steaks to have grill marks seared onto both sides...

Cast iron skillets is fer blackened fish!

I've been to Heitmillers in Waco once before...everyone allways talked about how great their steaks were supposed to be. Walk in and they were electric grilled! I mean...WTH!

I had a great steak one time at a Hoffbrau Steak House. I found out that they cooked on cast-iron. I started experimenting with that myself, except with the cast iron griddle on a grill so that I got some of the smoke flavor.

Now that is just about the the only way I cook on a grill anymore. The meat retains the marinades and there isn't as much of a risk of overcooking it and drying it out.

Someone told be they quit doing that and went back to a grill. Haven't been to check it out yet though. I does make a terrific steak!
