Good bleu cheese is a party in your mouth. So many unique flavors and aromas (of course, Sweet Tooth hates it, and says it reminds her of my stinky feet in sneakers!)! Just got off the road after 450 mile drive, and snacks and a small malt Scotch sounded wonderful here in the campground. Triscuits, extra-sharp smoked cheddar, and slab of bleu cheese. Warm for 10-15 seconds to soften!

I really prefer to buy chunk cheese, and crumble it fresh as I need to. Packaged crumbles tend to spoil quickly and lose flavor and aroma. If you like it as dressing or dip, i reccommend the refrigerated Litehouse, rather than an off-the-shelf one full of salt and preservatives!!

Both of ya'll are spot on!

I love me some Blue Cheese. Wing Stop is our preferred wing place and we always get a pint size cup (pound) of their blue cheese dressing, and IMO it is the best. One time I found a chunk of Blue Cheese in the dressing about an inch in diameter. The manager told me they make it fresh in house every day and every day they sell about 5 GALLONS of it.
