The salmon thread got me to thinking, maybe I need to make some Salmon Patties and mashed tater patties one night for dinner soon. Anyone else eat these growing up?

Give this a try. Poach some boneless fish filets in Zataran's crab boil. (In order of preference - Sheepshead, Redfish, Drum, Crappie, Speckled Trout, Bass, Catfish.) Place the filets in the fridge uncovered to cool and dry. Once cooled, flake them and use instead of salmon in your patties. Be sure to not overcook the fish. Poach them very gently with a low simmer.

Mama made them mexican style and they will blow your socks off! Use the same type of batter for Chile Rellenos with a tomatoe garlic sauce spread over top.

yep, meat and potatoes 3 meals a day while growing up ... nothing went to waste and potato cakes were one of my favorites

For years in one of my firehouses we had a guy who when washing dishes would ask "who wants me to make some potato pancake later from these leftover mashed potatoes?". Everyone would always say "sure", "that sounds good", etc. Then he would put the pot of leftover mashed potatoes in the ice box. Not once did he ever make potato pancakes and someone else would end up having to throw them out and wash the pot later or leave it for the next shift to throw out and clean. No one ever caught on to his trick to get out of washing that pot. Not once did anyone ever question why he never made those potato pancakes and I have no idea if they even exist, nor how to make them if they do. I of course never did this myself.
