Blame Oxner for this creation!! Hope it turns out good.  I made some really nice cornbread muffins, to have tonight. Sweet Tooth asked her Mom what she wanted for dinner, and she voted "meatloaf". The better half would make theirs, and I got to do mine. Yeah baby, we are all over that!!! Sautéed up bacon, onions, garlic, and jalapeños. Mixed in the roasted cornbread crumbles, with an egg and lots of spices. Put the other half of the bacon mix in with the meat, and canoed it in a large pan, then topped the whole thing!!
