Made some fajitas with flank steak. Marinaded with 1 part each of olive oil, bourbon aged Worcestershire, and lime juice. Seasoned with salt, ancho chili powder, cumin, and pepper.

Hey! I have the same tortilla warmer, salsa bowls, and metal bowls in my kitchen.
Meat looks great! I've been thinking about cooking directly on the coals for years, still haven't tried it yet though. Was the ash a big deal, or did it wipe right off?

Ha I imagine there are plenty of them floating around these parts. If you get good hot coals the ash isn't on top of them. The moisture from the steak keeps the parts touching the coal from turning to ash. I'm not sure how true that is, it's just what I was told. But you can fan the ash away, throw the steak down, and have no problem with ash. I didn't even need to wipe any off. You just get a damn fine sear on it since the cool is 800°f-1000°f. Give it a shot. I don't think you will be disappointed. Just use lump and not briquettes.

Dirty steak is good. Just has to be lump and super hot. Fanning to clear ash and get coals red hot. You don’t get an ashy taste at all.

Not trying to be a smartass, but I don't really see the upside to this compared to cooking over the coals. I can potentially envision plenty of ash on the meat, as well as loss of seasoning.

Not trying to be a smartass, but I don't really see the upside to this compared to cooking over the coals. I can potentially envision plenty of ash on the meat, as well as loss of seasoning. No ash gets on the meat. I'm not 100% sure how, but I can say that it didn't. I read about this technique from a fancy steakhouse that cooks all their steaks this way. The only difference between this and over coals is the heat intensity. Those fancy steak houses usually use something that will sear at steak at 1,200+ degrees. Laying directly on the coals will get you around 1,000 degrees where putting them on a rack will put you closer to 400-500 degrees. At the end of the day it's just changing the quality of the sear. As far as the spices you are correct. You want to season heavily like you are blackening fish and it will be fine.

It will work; with that said, hot coals are burning at 2000 degrees. Not really. Mine is sitting on a piece of plate. For those temps you need some damn good airflow.

Only time we do something similar is to put a big flat rock in the middle of the campfire, with hot coals all-around it. Big glob of Crisco in the middle, and season that baby. Take fresh killed deer or elk steaks, and grill them right on the rock itself. Pretty awesome to sit all around the fire at night, and gorge on meat!! Pass on the coals themselves, tho. Don't like ashes.
