Down through the panhandle (amarillo south through Lubbock) where would you stop to eat? Any type of food (but good Mexican food is my jam). This could be breakfast, lunch, or dinner.
Probably go through San Angelo too.
I'm considering Coyote bluff in amarillo.

Coyote Bluff has great hamburgers. Just south of Lubbock, in Wolforth is Evie Mae’s Bbq. It is really good also.

Check the hours on both, good choices though. In Lubbock Cast Iron Grill is my favorite breakfast place. In San Angelo when I worked there I liked Western Sky a no frills busy steak and Mexican food place. Since you said Mexican in Lubbock Tauqeria Autlan on 50th and Arandas on 34th are a couple I like.

Orlando's has good Italian food in Lubbock. I eat at the one off the loop when I get that direction.

Right off the interstate across from the Loves and by the airport in Lubbock is a pretty darn good Mexican food place, Mi taco village, for lunch. Get the burritos( beef and bean, carne guisada, or chicken and rice) with queso on top.

Or in Amarillo and Canyon go to Joe Taco for Mexican food. It's awesome as well
