Performance appraisals was the job I hated the most a a sales manager. We had to rate the salesmen on a 1 to 5 scale. Four and 5 being the highest. Number 4 was meets expectations with number 5 being exceeds expectations. I would rate the store bought pudding as number four. Some of your recipes and thoughts would be a number 5. You knocked my socks off, . Most of those who were rated meets expectations got promoted, and I would buy this dish again. Especially to a covered dish get together where most people have gotten reluctant. To eat cassorles.

My Mom makes the best. Everything from scratch... no pre made pudding mixes. There is defiantly a nak to it... mixing the egg into the pudding a little at a time so as not to cook the eggs. The egg whites are used for the maraign (sp?) on top. Have to whip till it’s just the right consistency and it will make the little tips. Then you put it in the oven set to broil and brown the tips. Gotta watch it real close because once it starts to brown, it will go real quick. I’m telling you it will rot a hole in your teeth! Meringue (otherwise known as calf slobber) is verboten on REAL nanner puddin. Only yanks use slobber edit - dang it. Now I'm hungry for some

hmmmm..........Interesting you added condensed milk. I'm thinkin that there is the secret ingredient to nanner puddin perfection. Thankee Bill! edit - 1 tablespoon of vanilla extract would render the concoction inedible. Are you sure about that? And 14 bananas?

This thread brings back some memories. Dad's side of the family was 2nd generation Texan from San Antonio....so it was homemade tortillas, tamales, etc. Mom's side of the family was back woods Arkansas, and i mean backwoods. One of Nanny's specialties was homemade banana puddin. Everytime she made it, it would never fail, my grandpa (Papa) would comment it was not fit to eat due to the amount of calf slobber....also known as meringue.

If it contains “instant vanilla pudding” it ain’t real banana pudding. A gallon of sweetened condensed milk cannot save it. You may like it, it might be good to you. It ain’t the real thing.

My Mom made the best I've ever had. All from scratch. Fortunately my little sister paid attention. Hers is great also.

I used to LOVE when Grandma made her nanner puddin. She always used a bowl that weighed 20 pounds when it was full. Some nilla wafers inside and some on top. Mmmmmmmm

Bryan makes a dang good nanner pudding at 407BBQ. Fine way to finish off a meal there. I’m thinking maybe I need to stop in for lunch tomorrow!

Needs real vanilla. The strong stuff with the specs in it.
I agree...no Jello products. No "Instant" mix, regardless of brand.
BUT, the pudding needs to be cooled before you but the bananas and vanilla wafers in, otherwise the bananas turn black and the wafers get soggy. I am neutral on whipped cream or no whipped cream.
We all need to practice Whoa more.

Whoa Whoa Whoa. Nobody like a black nanner, I’ll give ya that but you have to have some wafers soften up and some on top to stay crunchy. It’s the beez neez baby!

Ripe bananas, and then soft wafers hanging out in the bowl. That's the way my Great Gramma, Gramma, & Mom did it and the way I like it.
I will hit that like it owes me money.

Prior to this Covid BS, Loggin's Restaurant in Tyler had the best banana pudding I've ever had the pleasure of sticking a spoon into. Kept it warm. At one end of the buffet and you could pitch till you win.
I sure do miss it.

We make a double batch of this recipe:
1 (5 ounce) package instant vanilla pudding mix 2 cups cold milk 1 (14 ounce) can sweetened condensed milk 1 tablespoon vanilla extract 1 (12 ounce) container frozen whipped topping, thawed 1 (16 ounce) package vanilla wafers 14 medium (7" to 7-7/8" long)s bananas, sliced
In a large mixing bowl, beat pudding mix and milk 2 minutes. Blend in condensed milk until smooth. Stir in vanilla and fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.
