That is awesome, I grew up hunting capybaras in Venezuela, where they gather in large herds in vast grasslands near rivers. They are SUPER skittish and head for water as soon as they spot you, sometimes staying underwater for long periods. The meat is delicious, by the way, very moist and mild-flavored. That's a nice sized male, not one of the huge dominant ones but you'll get good meat out of it. I've never seen a Capybara taxidermy, that would certainly be pretty unique. One last tip. Don't use to heavy of a gun, they're not super hardy so a medium-sized caliber will easily take it down. I shot many of them with my old .243.

That's awesome! I took a capybara with my bow on a hunt in Argentina years ago. Still have the skin in my trophy room.
