Man, the wife and I had a craving for some good Scotch eggs this morning. Great way to use that bulk breakfast sausage, or even Italian sausage for a little Mediterranean flair.
Beer and whiskey, 'cause you can't drink bacon!!

Ingredients 1 lb bulk pork sausage, either breakfast blend or Italian 1 teaspoon dried minced onion 1 teaspoon salt 4-6 hard-cooked eggs, peeled 3/4 cup all-purpose flour (optional) 3/4 cup Panko crispy bread crumbs (Italian bread crumbs if desire spicy) 1 egg, beaten, for coating
Steps Heat oven to 400°F. In large bowl, mix pork sausage, onion and salt. Shape mixture into 4-6 equal patties. Roll each hard-cooked egg in flour to coat (optional) Place on sausage patty and shape sausage around egg. Dip each into beaten egg; coat with bread crumbs to cover completely. Place on un-greased cookie sheet. Can line with foil, for easy cleanup, if desired. Bake 30-35 minutes, or until sausage is thoroughly cooked and no longer pink near egg.

For all you wanting to try this, use the wife's Insta-Pot for perfect eggs. One cup of water, 6-12 eggs, and set on 3 min for soft, 5 min for medium, and 7 min for fully cooked. They peel like a dream too!!!

With the trivet. Steams all around them. Many different recipes on web, but all are essentially the same. We get fewer blow outs with the InstaPot than boiling too.
