I had posted these on a memorial day thread in Naks Off Topic about whats on the grill/smoker. Wanted to repost it here in case some missed it, they were that good and you should try this or some variation of this. Wife wanted hers halved with Cream cheese & Cheddar cheese only so it will have less Jalapenos taste, me other way around! Stuffed mine with smoked feral hog meat that already had Jalapeno, Bacon and Cheddar bits in it, added some bbq sauce, sharp cheddar cheese and folks it was really good. Going to do a bigger batch this Sunday, Will probably do some with lump crab meat, Pepper Jack cheese and not sure what kind of sauce to add to the crab?

Looks Good! To this day this is the only thing I like wrapped in bacon.
For the crab you'll want something with fat. Not sure what sauce would work. I would put a little cream cheese in the crab instead of sauce. Only other thing I can think of is some kind of remoulade sauce.

Looks Good! To this day this is the only thing I like wrapped in bacon.
For the crab you'll want something with fat. Not sure what sauce would work. I would put a little cream cheese in the crab instead of sauce. Only other thing I can think of is some kind of remoulade sauce. Thanks I actually put a light layer of Cream Cheese in all of my stuffed Jalapenos, not near as much as the wife likes Remoulade sauce sounds interesting

Man-o-man, those pic's look great!
I went on a NM anterlope hunt year before last & the outfitter had a dinner for all the hunters. One of the appetizers was Jalapenos stuffed with peanut butter & roasted on the grill. They were surprisingly good!

Looks great! I do crab stuffed peppers pretty often. I like mine with just crab & cream cheese mixed, and seasoned with Magic Dust. Sometimes I’ll add diced green onions to the mix too.

Love love love jalapeños. We generally use them whole and grill, smoke, or bake in the oven. Found that our friends all love get-togethers when we bring the snacks!!! Found the absolute best thing for doing a lot of them, three dozen at a time. Go to a Bed/Bath/Beyond or a restaurant supply and get one of these popper racks. We like to do the whole popper, core it out to hold the goodies. Mix cream cheese, good sharp cheddar or other cheeses (any smoked ones are great), and sometimes chopped scallions. Use a piping bag, or ziplock bag with the corner cut off, and totally fill the popper. Then we just top the thing with a 1/3 piece of bacon. That way we can do the entire rack with one pound of bacon. The only time I wrap an entire piece around it is if I do shrimp or spicy sausage, on a halved jalapeño, and want to keep the meat juicy and not overcook the shrimp. I usually cut the shrimp in half to straighten it out, and imbed it in the cream cheese.
