This is a follow up to my Bacon post. This is some Buckboard Bacon I made using a pork butt. I cured it the same way and smoked it the same as well. It was awesome. I was so lean that I fried it in bacon grease. It tasted like a cross between bacon and ham. I will do this again.

Yes I did. I removed the bone and cured and smoked the top half only. I took the bottom half and smoked for pulled pork.
