Did some home made fried okra tonight. I forgot how good it was when done properly.

I LOVE OKRA...any way you cook it....full spears sautéed in hot butter is one of my favorites....

Looks great! How about telling us how you made it up? What kind of breading? Deep fry or pan fry? Inquiring minds want to know!! 60/40 flour/cornmeal with some Julio’s seasoning mixed in the batter. Soak cut okra in milk for 10-20 mins, batter and immediately fry. 1.5-2 mins in the oil. These were pan “deep” fried. Salt when done. Little tip since fried food doesn’t keep well once out of the oil. Rest the food on a roasting rack to drain the oil and keep in the oven at 170 and it will be nice, crispy and hot even 20 mins later.

Wife likes it, I’m more interested in the bacon cheeseburger on the same plate. Yea that was pretty good as well! If you haven’t tried Martin’s potato buns or butter bread you are missing out. They sell it at HEB. The bun makes the burger.

Okra, with slices of country style potatoes all mixed together with cornmeal and fried in a cast iron skillet. Fried until it is a little blackened. Served with a picante sauce is a mea in itself.
