Pork loin sliced thin and blistered in a pan with a bit of olive oil. Gravy made from the juices left in the pan. Smashed potatoes with the skins left on. Green beans. A couple of slices of home made bread. A glass or two of a really ice-cold Pinot Grigio to wash it all down. A bite of good chocolate to put the sweet tooth to sleep for the night.

I just love to cook, so pretty much anything I think up I enjoy cooking ... a few:
chicken fried venison, pan fried potatoes, gravy with something (anything really) green as a side
low & slow Brisket, homemade potato salad, baked beans (or jazzed up pork n beans) ... plus a variety of other meats tossed on the pit
pan fried pork chops, mashed potatoes and gravy
beef, chicken, venison fajitas, smothered onions, spanish rice, pinto or refried beans.
I have really grown to love our Instant Pot ... pork ribs, creamy chicken Marsala, etc.

That's a tuff one, but...
Chicken fried backstrap with pepper gravy, fresh fried shrimp right off da boat, smothered potatoes w/homemade smoked deer sausage, smothered cabbage, and a jumbo fresh jalapeno. Ice cold Lone Star Light to wash it down with. Fill in the cracks with a warm fudge brownie and vanilla BB.

A big pot of Brunswick Stew with cornbread and apple cobbler. Lots of friends and/or family to share it with.
When I say a big pot it is
10 lbs chicken 10 lbs burger 10 lbs onion 10 lbs taters 2 gallons tomato 1 gallon of corn 1 gallon peas Salt/pepper/garlic to taste
All cooked outside in Washpot, takes at least 4 hours to cook one.

kmon1 I hope you do not mean a galvanized one. What do you stir it with? An oar? Sure he means the old cast iron kettle, we called it our wash pot because my mother heated water in it to wash clothes in an old wringer washer. We had another to cook the meat for head sausage and render cracklins.

Man this post got me thinking. Me and my grandfather had a talk a while back about the best steak he ever had. He argued that the best quality and the best cooked steak you ever head probably wasn’t your favorite. The best steak you ever had was probably just as much a circumstance of the situation as it was the steak. Meaning the best steak was the one that meant the most to you at that particular time. The steak that was cooked perfect for the mood you were in. It may not be the $60 high end steakhouse steak, but the $10 steak your grandma cooked for you.
My favorite meal to cook isn’t as fancy as some of the others. Roasted chicken and root vegetables are at the top of the list. My grandma would brine a chicken overnight and then let it sit uncovered in the fridge for a couple of days to dry the skin out. Then she would put it in the oven on a bed of potatoes, turnips, parsnips, and carrots. If I had to choose a last meal. That is the one I would choose. I can almost cook it as good as she can. Almost.

I call it queso chicken, usually have Mexican rice, refried beans, and a simple salad. Start by marinating chicken breast, I prefer chile lime marinade. Make a batch of pico de Gallo, equal amounts of tomatoes, jalepenoes, and green onions chopped up, with salt and lime juice to taste. Grill chicken breasts, to plate, chicken, then top with chili con queso, and grated cheese microwave until queso and cheese have melted. Put pico on top of cheese, add rice and beans. Enjoy, this is one of my family's go to meals..
