Saw something similar on here a week or so back and I wanted to try it.

Did a bacon weave and cut the pork loin flat. Filled it up with jalapeños and cheddar cheese. Wrapped it all up and seasoned it. Smoked it at 225 for an hour and cranked it up to 350 to set the bbq sauce. Turned out amazing.

All the cheddar cooked out so I restuffed the jalapeños with cheddar after it rested.

I’d like the final cheese to melt some also, but it looks fantastic otherwise!

Ricky the cheese did melt a bit by time I ate it. The heat coming off the meat and jalapeños helped it along but I dang sure wasn’t throwing it in the microwave lol.
