Extended Time for Processing Deer

I have never processed my own deer meat. We quartered our deer and dropped off at a new processor by Lubbock 3 months ago. Yes, 3 months ago and still no meat. When we dropped it off, the owner said they were behind, but our meat would be done quicker since it was quartered and he had to do it quicker. When my son dropped off a deer the same day that was not quartered, he was told 10 weeks for his meat. My question is, will my meat that has been quartered be any good since it had defrosted in transport, then re-frozen at the processor, then will be defrosted for him to process it, then re-frozen yet again to get to me? I had read where the the backstraps and tenderloins would likely be dry and tough. What says the forum?

Very sorry you're going through this. I hope you didn't leave a deposit, 'cause by the sound of it, I doubt you'll ever get a call that it's ready.

Pull out the tenderloins, strip out the back strap, trim the shoulders, and hams at the camp. Takes less than an hour. Freeze them and relax. They are easier to slice and grind half frozen

I wouldn't want deer meat that took a processor 3 months to finish. Mine stays pretty busy but never takes more than 2 weeks. He said he can do 15-20 deer per day.

Did you give them your name and number? Ya they got mine and my wife’s contact info. I have even called a couple of times over the last 3 weeks. First call, they were rude and told me if they haven’t called me then it ain’t ready. Second call a week ago I was on hold 10 minutes then talked to the owner. When I told him that he had said it would be done quicker since I brought it in quartered, he said he covered it and froze it at 5 degrees. He said the meat would be fine. I’m going by Monday and asking for my deposit back. We have them $200... it was $100 deposit for each quartered deer

To actually answer your question, the meat will be fine as long as it was handled properly. It’s not that big of a deal to refreeze meat. You may lose some flavor, moisture, whatever, but it’s typically only noticeable when done multiple times.

Take or call a GW. The meat is considered the trophy, and has to be cared for as such. You are responsible for caring for the meat after the kill and until it’s final destination, h in this case is the processor, the processor is then responsible for it after that. Processors have to keep a strict log of animals and tags, have the GW prod around and see what he can find.
