we normally go to some friends house along with 4-6 other couples but the normal hosts will be out of town, so my wife decided we would host at our home... and I get to cook the meaty type dishes, chips, dips, salsa which will likely consume pretty much all of Sat. (plus a quick pass over the yard to knock down clover) ... and other people will be bringing sweets and other things. Sounds like 6 couples plus us, or 14 people split evenly men and women.
thinking of doing: 4 racks of pork ribs (will get combination of St. Louis style and baby backs) 2 dry and 2 moist sweet. 3 dozen bacon wrapped stuffed jalapenos ~2 lbs venison fajitas (actually just tenderized backstrap / ham steaks marinaded & seasoned) 2-3 varieties of link sausage cut into bite size pieces (jalapeno/cheese, polish, German, maybe boudin and/or chorizo) 3-4 russet grilled stuffed potato skins
think that would be enough?

The HEB queso recipe, for whatever reason, has always been a huge hit.
1 box easy melt cheese, 1 lb hot breakfast sausage, 1 can rotel, 1 jar of "that green sauce", and half a block of cream cheese.
It was on a coupon one time, so I tried it out. Good thing I did. Odd thing about it is no one likes the "that green sauce" by itself, but it's dang good in that queso.

If your talking to me HEB carries a store brand salsa called That Red Sauce and That Green Sauce.

I will be doing a selection of game items including:
Duck sliders Blackened shrimp tacos with Jicama slaw Venison chili Bacon wrapped venison tenders ( venison cubes with a piece of onion and red bell pepper) Assortment of chips/dips and adult beverages. Knowing my wife, there will be multiple chocolate desserts also.

Pre-Game: St. Louis Ribs Red, Hot and Blue Potato Salad (Google it and thank me later) Spicy Cole Slaw Baked Beans Cherry Cheescake Unsweet Ice Tea (the wife) Sweet Ice Tea (I mix 50/50 with unsweet)
Post-Game: Leftovers: we pull rib meat that's left and make sliders and enjoy the rest of the "stuff" with them.
