I am so excited. For years, I have made dried sausage, breakfast sausage and fresh sausage with some good ol' square heads. Actually entered some of mine in the County Fair a few years back and came away with a blue ribbon. Btw, dried sausage is the only food product actually tasted at the county fair.
Last year, Bug Man sold his 25 acre home place to a developer and we lost our sausage making house. The processor customized a sausage order for me and it came out pretty good - can't complain about that. It's just not the same. I take a great sense of pride in what I refer to as completing the circle. Identifying the appropriate animals, getting on them, taking them down, preparing the meat and then making the sausage. I just felt like I was missing something.
Bug Man has bought another home out in the country and just now got his new set up ready. Frankly, I am impressed with it. I have two more does to get and then will take five deer (donated a 6th to hunters for the hungry) minus most of the back straps and two hind leg quarters for jerky and will set about to make it happen.
