What’s everyone using for deboning their kills? I broke my knife trying to separate a femur the other day. Looking to upgrade to something a bit nicer. (I’ve heard the cheap restaurant / victorinox boning knives are good, too).

Here is my favorite

A few years ago I walked into cabelas and they had bins full of Kershaw stiff bladed fillet knives with plastic cases for $6 each on clearance. I bought 2 of them. They have been great, wish I would have bough more. Keep a steel close buy and keep them all razor sharp.

I use a 3 blade Browning that I’ve had for 40 years. Great steel and thin blade that I can get into the tight spaces. I went on the internet and found that it’s a ‘vintage’ knife now. Best steel I have on any knife I’ve used yet.

I use one I made out of 1095 steel and absolutely love it.

I use the Dexter 8" breaking knife as my "go-to" processing knife with their "sani-safe" grip. They are inexpensive, sharpen easily, and hold a decent edge.
