The typical Thanksgiving/Christmas turkey dinner has wore out it's welcome with me. Anybody else? What's your favorite way to prepare TriTip/Picanha steak? I like a slow smoke @225 to an inside temp of 115 or so, then sear the snot out of it on both sides until it gets to 133 or so. Dry brined with coarse salt for a few hours previously, of course.
