Axis Poke.. (Texas version of a Pacific Tuna dish)

Wife and I went to Hawaii for a week a while back. Poke Tuna for almost every meal for us. It was the first vacation we'd ever had that we LOST weight. Got home and had to have more. One problem. No tuna in the Gulf of Mexico like there is in Hawaii..So, I did the next best protein I knew: Chop Axis backstrap (any full lean cut will actually do), then smear it on your cutting board with the body of the knife blade until meat is near a patte consistency. Once you reach the desired texture, finely mince garlic and green onion and add to meat. Season with pepper and fajita seasoning. Add a small amount of soy sauce and sesame oil. Squeeze one full lime. Mix and set in fridge for about 20 min. Eat immediately and don't share.

Sounds and looks great. Gotta love some Axis. I have made Tartare from axis and elk tenderloin it is very good.

No tuna in the Gulf of Mexico like there is in Hawaii.. YFT fishing in the Gulf of Mexico is actually way better than Hawaii fyi. October through the winter is prime time to catch ahi right here.
