I bought one last week while it was on sale at HEB, froze it and plan to use it for chili. I have my own grinder.

Sous vide it at 135° for 29 hours to get a medium rare finish. I have done it before and its shockingly pretty damn good.

Half for a pot of stew and the other half for a pot of chili. Cube it to about 1/2" square chunks for both, brown and season with salt and pepper, garlic etc., then bag and freeze until ready to cook it.

Put it in a slow cooker, salt, pepper, chiles, and garlic and make barbacoa. Great soft tacos.

Trust me on this one: 1 can beef broth, one jar of peppercinnis, one ranch packet, one stick of butter. Cook until fall apart tender, pull meat out and shred it with a fork, and let it simmer in its own juice for a while.
