Sandhill crane is called ribeye of the sky, because if cooked properly it tasted like a good ribeye. I have had crane before and thought it was as good as a ribeye,but I had never had them at the same time. I recently went crane hunting and happened to get a few. I decided to do a little cooking and a taste test. I seasoned with extra virgin olive oil,sea salt, garlic,and black pepper. I used a rub on bone in ribeye. I cooked a 1/2 of a crane breast,a boneless ribeye,a bone in ribeye,and a NY strip. I sliced them up and taste all. I can honestly say I liked the crane the best! In order of my preference was crane,boneless ribeye,bone in ribeye, strip steak. I also had cabbage and left over squash to go with the meal.

That’s my kind of meal. All the steaks look great! Really want to try sandhill crane. Looks awesome!

Let those breasts age silver skin side up over night in the fridge. Then filet that silver skin off and it'll be even better. Step further would be one of the tenderizing knife deals...I forget the name.
