I'm going to make some this weekend but it's been years since I've made it. I remember Eagle brand, condensed milk, sugar, vanilla extract and milk. Am I forgetting anything? Anyone know of a better recipe?

I use cream, egg yolks, sugar, vanilla, salt and half and half. It's a custard base. You can add to it from there.

Add some corn syrup to the mix. It will sweeten only a little but the consistency of the ice cream will be smoother.

Ours is 1 can eagle brand 1/4 cup corn starch 1 gallon whole milk 1 tablespoon vanilla eggs sugar
Its either 5 eggs and 3 cups sugar or 3 eggs and 5 cups sugar.
Beat the eggs/sugar/cornstarch in a bowl and set aside.
Put 1/2 milk in a pot over medium heat and brink to a boil stirring constantly to keep it from setting on. When it boils add the egg/sugar mix and continue stirring and turn off heat. Pour into the freezer add eagle brand and vanilla. Top off with rest of milk till freezer is full.
Usually we refrigerate it till its cold then run it in the ice cream freezer.

The one I have been using to make 1 gallon 2 cans eagle brand milk 2 quarts half and half 2 tablespoons vanilla 6 peaches peeled and smooshed
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.

My ice cream is half and half, heavy cream, sugar, fruit and a double shot of corn syrup to smooth the frozen mix. One cup sugar to one quart cream or h&h. Just barely sweeten the fruit, add the corn syrup to the fruit too.

I stumbled over the corn syrup thing while researching something totally unrelated. A little more research and I added it to my simple ice cream recipe. Now it has five ingredients.
Mom used to make frozen custard. We would stir stir stir to cook the eggs over hot water and then freeze the resulting custard. I remember it was very short lived in our family of seven. I have not had that frozen custard since I left for boot camp.

I know adding a little Karo to a cookie batter makes the cookies softer, I read that it has a higher cooking temp, and see why that works, but making ice cream creamier really was a new one. Tried on on a small batch, almost as good as soft serve ice cream. Thanks for that tip.

I recently looked just a little at the chemistry of adding Karo to ice cream. BTW, Karo is the only brand of corn syrup that does not have high fructose corn syrup in it. Karo is almost all glucose. It is used to add moisture and a little sweetness to recipes. In uncooked recipes like ice cream the glucose affects the other sugars somehow to prevent crystallization. It is perfect for homemade ice cream that usually turns into a block of ice in the freezer.
This is all news to me as I have not made ice cream in a coons age. And I a have an old White Mountain 6qt waiting in the garage. Maybe it is time for peach ice cream again...
