Not much so far this week. Ham sandwiches yesterday, Monday one of the guys brought in a homemade lasagna. Today ground beef taacos, spanosh rice and hominy casserole. The hominy is a #10 can drained, 28 oz of not drained rotel, about 3 cups of canned nacho cheese, cup of bread crumbs to firm it up. Then baked at 425 about an hour and topped with some shredded cheese. Came out pretty good, I got the idea from Mbavo's post the other day.

Had about half a left over spiral ham from Monday. Veggies are chopped cabbage, potatoes and onion roasted together. Messed up and added a little bacon grease at the beginning for a little flavor and to help brown things up, ended up charring the cabbage and onion a bit. Prob should have let it all cook then added the bacon grease last 20 minutes or so. That or started the potatoes 1st then added the cabbage and onion after they started to get done. Little extra effort on the green salad today.

Cabbage is good stuff and better yet it is cheap. Roasted, braised, and fried are all good. Don't forget sauerkaut either, I picked up a few cans today and prob do sausage and kraut one day next week.
My momma made cabbage rolls and baked them covered in kraut.

Love cooked cabbage. Haven't had it in years. My great uncle makes it two ways for thanksgiving and Christmas every year, love the stuff.

yep, I grew up on lots of veggies from our gardens (my parents, both grandmothers plus some neighbors and friends). Cabbage was a pretty good mainstay fixed in a variety of ways.

Pork shoulder that I sliced into loin size pieces, red potatoes. Roasted about 2 hrs at 425 in my little convection roaster. Seasoned with a pack of lipton soup mix plus extra black pepper and garlic powder. Not a big carrot guy but somebody put a couple pounds in there. Roasted in the oven for about 1.25 hrs at 400 deg, coated from the get go with a leftover package of glaze I didn't use out of a spiral ham, brushed with butter after they came out. Taste decent, again I'm not much of carrot guy/. Thats why I didn't just slice and toss in the roaster with everything else. Standard green beans and garlic bread. Most of what I've done lately is just the cheap standby's. Sandwiches, chili dogs, pintos cornbread and etc. WIll try some new things next week or so.

Just treated myself to a pan seared prime ribeye cooked medium, been a good while. 12 pack of cold beer....Smokin’ hot cast iron skillet outside, dropped steak in for 3&2 then pulled to rest. Dropped in one chopped yellow onion, one carton of sliced mushrooms, couple peppers, (forgot the garlic cloves ). Gone! Sweet dreams.

Redid the roast cabbage, potato, onion dish I flubbed couple weeks ago. I was right, did the potatoes for about an hour dry, added some olive oil, black pepper, cabbage and onion and roaster another 30 minutes. Came out much better. $.74/lb chicken quarters with some Tajin chili lime seasoning and chopped jalapenos. All came out pretty good.
