Anybody familiar with Shun Cutlery knives? I'm shopping for a few knives (trimming brisket fat and slicing brisket, for example) for the kitchen and these came recommended to me. In particular the Classic BBQ set (https://shun.kaiusaltd.com/knives/knife/classic-bbq-set). I never heard of them before.

Curious how they compare to other brands or suggestions for other brands. I don't own any quality knives in the kitchen.

I've never heard of them either I know that Mike C and I both make a bar b que set... mine can be seen on my webpage link at the bottom and can see them on my gallery.

I've owned Shun Classic kitchen knives for years now.
Pros, they are razor blades, scary sharp. Send them to the factory yearly to be re-sharpened for a nominal fee. Use the hone for daily use.
Cons, they are thin and are not made for heavy work. The Damascus layers will chip and break with hard use or even dropping on the floor.
