Stumbled across this Wagyu brisket at HEB this weekend and couldn’t pass it up at $5.99/lb. Wanted to see the difference between Prime. Man it was awesome. Tenderness in the flat was what really stuck out.

What type of smoker did you use? Cook time and temp?

20" Texas original offset. Great pit and holds temp pretty well. This one probably averaged around 280-290 deg for right at 6 hours.

Last brisket I smoked was a prime. Sliced, vacuum sealed and frozen. When we finish that one I’ll give the Wagyu a try.

My two local HEB's have them, but I have never seen more than two out to choose from.
