I buy 2 packs of cheek meat at HEB. Take them out of package and cut off any big chunks of fat. There will be quite a bit of connective tissue, but it cooks down. Pat dry and put in crockpot. Season with salt and pepper. Chop up 1 onion and put on top of meat. Chop up a few cloves of garlic and put on top of meat. Place 2-3 bay leaves on top of meat. No liquid is needed it makes its own. Put lid on, set to low, cook at least 8 hours. When it’s done take off bay leaves and discard. Shred meat with forks. Taste to see if it needs more seasoning. I put mine on before I go to bed and it’s ready for breakfast.

HEB has low carb tortillas. 4 net carbs per tortilla. I've dropped about 50 pounds eating low carb. I don't care to much for sweets, but tacos are difficult to give up.

HEB has low carb tortillas. 4 net carbs per tortilla. I've dropped about 50 pounds eating low carb. I don't care to much for sweets, but tacos are difficult to give up. Yep, try not touching a chip or tortilla at a Mexican restaurant, I have done it and it's tough, but dropping the weight feels great.

Thanks for the recipe. My daughter ordered barbacoa this weekend because she thought it was just beef tacos. I let it ride and she thought it was pretty good, will let her in on what it really is one of these days.

Looks great! Barbacoa one of my favorite things. I put chopped onion and cilantro on mine with a lil squeeze of lime.

Well plus a boat load of pico/hot sauce/onion/cilantro if you do it right by me
