Headed to Brady, my cousin and her husbands ranch Easter weekend. I'm in charge of Friday night dinner, got it covered. Saturday brunch/breakfast. cast iron ready cowboy coffee ready I want to make breakfast tacos. Anyone have any secrets besides sausage, bacon, potato, pico, cilantro, eggs, cheese, salsa, tortillas? chorrizo? I guess its pretty simple

Ribeye and eggs! I’ve passed by that gate more times than I can remember. That’s a nice camp setup! OOH, I saw some thinly sliced ribeye today at the store, Thats a GREAT idea DONE !!!

Left over brisket, sliced avocado. This ^^ with some eggs if you want. Grill some extra fajitas the night before (or brisket/steaks) and slice them thin. Bacon, fajita, eggs, papas (crispy), con nopalitos and salsa makes a hell of a breakfast. Jalapenos on the side so the little mouths don't get pissed off. Cup of coffee and a bloody mary to wash it down. Close your eyes and take a deep breath. Life is good. Looks like a good time, hope you enjoy Sir.

For me breakfast tacos aren’t complete without barbacoa. Skinner had a post with a great recipe!

Depends how adventurous you want to be. 1. Shrimp, eggs, avocado tomatillo creamy sauce, cotija cheese 2. Brisket, eggs, cheddar, and pico 3. Steak, eggs, crispy potatoes, Gouda, mateos These are regulars when we go to my buddies ranch.

Picadillo is one of my favorite breakfast taco dishes. Mine too Sir. Have a couple of pounds of ground venison in the freezer and will be making some soon. Picadillo with gold potatoes and a good green sauce is hard to beat. When I was younger there used to be a taco shop in Aransas Pass that made the best picadillo and THICK homemade flour tortillas. Something about the thick tortillas and that picadillo that was just damn good with their green salsa. They were open early, many mornings on the way to go fishing or work I'd stop there. As soon as I walked in the door she started making my tacos. I miss their barbacoa and picadillo.
