It depends on your processor and where you shot it. And how it was processed. A lot of variables. Steaks, hamburger, sausage etc. Me about 35 t0 40 pounds of pure meat.

I ordered the backstrap cut into steaks, tenderloins untouched and the rest was ground meat cut with 10% pork and two axis spikes are yielding 51lbs together. Seems low to me

That's why I process my own.... I dont have the equipment nor the knowledge to do that and i am very much handicapped but i sure do appreciate your input. It has proven to be invaluable.

I just butchered mine and was surprised at the size of the backstraps and rear end. It was an impressive haul but I don't weigh the meat. Not much help on your answer but twice that of a whitetail doe.

Wasn't being a SA....just never really felt comfortable with someone else doing it. Don't know if its even mine, how it was treated, if it was kept cold, etc. That's why I learned to do my own...couple sharp knives, a meat grinder, and butchers paper....I don't do fancy cuts but I know that it was my animal and how it was handled thru the processing.

Yeah that seems kind of low on the 51lbs, should of gotten 30-40lbs per axis plus the 10% of added material. Sounds like processor was really lazy or left some out.

Also a massive wound in the shoulders can loose you a lot of meat but shouldn't be that much.....

Back in the 90's I was on a ranch that was doing meat harvest on spike axis deer to sell venison in stores. The skinned carcasses averaged 67 lbs on axis spikes killed and they would kill usually 30 per evening/night to get a 2000 lb load. They told me they averaged 67 lbs on almost every ranch they shot spikes on.
Are idiots multiplying faster than normal people?

Wow sorry to hear that. My nephew just had a large axis processed and got 39lbs of ground 13lbs of chili 5 packs of backstrap and 1 pack of tenderloin. My nephew lives out of town or I would of processed the axis.

Was that the harvest fee too and processor connected to the ranch? Did you quarter or take in gutted only? You will get more meat back taken in gutted only as they get neck and other meat. An 80 lb gutted doe will get me about 42 lbs of meat if not shot in the shoulder. I just took in a doe that was 75 lbs dressed and got about 50 lbs back with a little sausage, mostly ground. Total price was $95 at Fischers. Now my buck was $297 but a lot of sausage, jerky and sticks too and not a single bit of meat loss due to good or bad shot depending on how you look at it. 243 single lung.

Long story short, i was quoted one price but after the shot i was told that the price i was quoted was the sale price and was no longer valid. I was quoted a price for field dressing but after the shot was taken the price was more than i was quoted. The guide said that my shot went through the first spike and injured a second one which immediately cost double the amount. We searched the 3 acre area for an hour finding no blood nor any sign of injured axis. The guide supposedly went out next morning and found the “injured” spike and put it down. He claimed he could hear the double thud of the bullet hitting both axis. I shoot a 7mm mag with muzzle brake and he was not wearing ear protection while standing just behind me. Its hard to believe he was able to hear the double tap or even a single tap when all the report of my rifle is broadcasted back towards us.
Because i do have some issues with PTS, and i am handicapped in other ways, i chose not to argue for health reasons. I am chalking this up as a lesson learned and “you reap what you sew”.

I shot a smaller axis last year and got around 35lbs of meat off of it, that doesn’t include the back straps in that weight total.

You'd be surprised at how much processors throw away because they are too lazy to clean. I process my own meat and I get a considerable amount more than I ever got from a processor. I grind up all the neck meat and any flank meat, and lots of scraps that people don't care to mess with but with a little extra work can yield a lot more meat.
