Only done it once, so looking for perhaps a better way. It seems that if you are packing out a buck in an external frame pack, you wouldn't need to field dress. With deer on his back, you could remove hind quarters with cutting at the joint, and also shed some weight by cutting legs off at the next joint. Same for front shoulders. No skinning at this point. Roll him over to remove back straps, cut the head off at the base and you have yet to have to saw or chop through bone. Is there a better way?
An unethical shot is one you take, that you know you shouldn't.

Before I shoot anything I make sure I can drive to it. I am too old for packing anything heavier than a 6 pack.

You just re-invented a great method. Google "gutless method" and there are a ton of really helpful videos and such.

That's how I do it but I do remove the hide from the quarters. I have a Havalon knife with the replaceable scalpel on one end and regular knife blade on the other end. That's all you need.

It's been a looong time since I brought out anything but meat. (I have, but not often) Bone em' out on the spot. Learned that hunting elk in the mountains and I guess it just stuck. No desire to carry around the weight of bones and hide and stuff I can't eat.

You are right sir, in Texas you have to keep the head attached for proof of sex. Leave his junk attached to 1/4 for proof of sex. Head comes off to quarter and packed as a separate piece and is not considered as what must be kept and maintained in edible condition. Tag meat, complete back side of license and I'm good. I don't see why the rack could not be removed from the scull as typically done with a hack saw, if I wanted to pack a saw. A hack saw is a whole lot lighter than a head. The more I think about this, the more weight I'm shedding.

Find a SOG Revolver knife. Knife and saw, one package.
I'd think skinning it would leave a lot of weight behind.

Knife will work.
