What does everyone do with their oryx meat? Looking for some ideas about processing, steaks,etc.

It is awesome so make as much steaks and roasts as you can. The rest grind for burger or sausage. Every bit of it is good, even the shanks, neck, and rib meat. My families favorite by FAR.

I get the backstraps made into bacon wrapped steaks, roasts cut, and a bunch of ground meat. It's really good. I don't waste any of it on smoked sausage

Its excellent, be sure to get as many steaks as you can, they are great. Last Scimitar I did, I sliced the backstraps 1.25", cut the ham steaks 1/2" thick and tenderized (very good chicken fried), tenderloins left whole, 20 lbs summer sausage, 15 lbs of breakfast sausage, a few roasts, and the rest was hamburger. Overall it was like 110 lbs of meat processed. One of the steaks grilled on the BGE
