Yesterday was at Clear Fork Processor outside of Graham, TX and they said they were taking no new animals for processing as full. Said the had taken in between 500-600 deer in first 3 weeks of rifle season, nearly 50 deer, mostly bucks daily the past 10 days. That's a bunch of venison and I would think a good amount of $$$$. At an average of $200 processing per deer customer, that's $100-$120K through the first 3 weeks. Conservatively, I would guess they will make $300-$400K of processing revenue through Dec. Paying 6-8 processors maybe $15-$20 per hour, that's a pretty nifty profit for the deer season, $250K or so in 3-4 months. Pretty easy to see why places animal process.

They said they will begin taking new animals for processing starting tomorrow.

Seems like it’s mostly profit. Maybe next year they can rent a refrigerated trailer or something.

Just averaging standard processing $100-$115 and specialty processing, Summer sausage, snack sticks, etc, $300+. I've spent $300+ before, jerky gets expensive

Yeah, they make a ton of money if they own the building, don't pay any taxes, or insurance, or electricity, or city utilities, or packing materialsor , equipment upkeep/maintenance, or walkin coolers, or grinders, or tenderizers, or knives, or sharpening tools, or cleaning supplies, or uniform/laundry expenses......etc.

If they are withholding and paying SS on the butchers/employees add in accounting services as another expense. I know that some of the local butchers make their Christmas money working for area processors.

Probably 1099 employees since it is seasonal work

Better weigh your meet before you drop it off. That many to process your chances of getting "your" meat back is slim.
