Went to Memphis for a quick road trip this summer and went to a couple of BBQ joints.
Central BBQ - Not that great. Just average bbq if you ask me. Dry rub wings were horrible.
The BBQ Shop - This place was off the hook. It was recommended by a local shop owner that said: "that's where the locals go". Had the bbq bologna appetizer. It was so good that I've been mimic theirs. Ribs and pulled pork went beyond our expectations.
Also went to Naaman's in Texarkana. Their ribs were better than Central BBQ but not as good as The BBQ Shop.

I grew up in that area. My favorite. Pulled pork.. Put a little coleslaw on your pulled pork sandwiches.

The only place I ever put coleslaw is in the trash. I like most vegetables but just can't do cabbage and carrots.

I can't stand soggy Cole slaw, most places make 3-4 gallons and use it for a week, It dosen't take that log to make it and keep it fresh in small batches.

Supposedly Bozo’s Hot pit Bbq has the best Memphis bbq. I will concur with Ox, cole slaw on a pulled pork sammich is pretty good!

A few guys I know are currently on a 5 day 2400 mile bbq road trip through TN, the Carolinas, and I think AL and MS. You can follow their journey @thesmokingho on Instagram, Twitter and FB.

Memphis BBQ Company is good. Spare ribs as good as any I've had. Basket of fresh fried pork rinds served when you sit down. We brought home a big bag, delicious.
Sausage and pulled pork was nothing special.
Not actually in Memphis, just across the border in Horn Lake MS.

I’m gonna make some fresh hand cut cole slaw tomorrow. And pulled pork. Put some raisins in your coleslaw. My slaw is already sweet. It’s coarse hand sliced tossed cabbage and chopped onions in SPS and drizzled with cider vinegar and marinated overnight in sweet vinegar dressing. In the morning it is great as is but it gets tossed and drained then tossed again with just a spoon of MW. Then finished with chopped green onions. I served it with baked beans, smoked mac and cheese with hatch chilies and pulled pork. Fresh sliced Texas peaches and B.B. homemade vanilla ice cream for dessert. There was lots of eating and not much talking during lunch. Oh yeah, I also baked two big taters after cleaning and coating with olive oil and lots of kosher salt (next time I’ll add coarse black pepper). They baked at 350, unwrapped, in a small cast iron skillet until nice and soft, them sliced into fat silver dollars and served to rave reviews. Nothing added, just the slice. I was surprised how well they were received.

I made mine between innings in the baseball game. The raisins are a first for me. I always add a dash of cayenne. These beans should jell up fine after my martini. My pulled pork is from the freezer. I'll make three dinners and several sandwiches with what I have prepared today.

It has been my observations that most barbecue places don't make their own potato salad and coleslaw. I think I can beat them all on both. I like eggs in my potato salad.

We make our own coleslaw, but not potato salad. The reason most don't is there is no payoff. Between the prep space, labor in time, and the quantity used, it's usually best to find a good commercially made brand. We use a gourmet potato salad, and quite frankly, I can't make it as good as they do. We also go thru about 60lbs each day. I would rather spend my time focusing on why folks come to my place to start with, the smoked meats.

407 BBQ tater salad is good like momma used to make, even if Tritonman doesn't make his own. I drive 25 miles for his brisket, beans, tater salad and nanner pudding. It's awesome
