carroll shelby's chili- best i've ever had:
for 2 lbs of meat 8 oz tomato- crushed or diced 1/4 cup quality chili powder- don't use a blend 1 tsp garlic- dried powdered ok, fresh crushed is better 1 large chopped onion 1 1/4 tsp oregano 1/2 tsp paprika 1 1/2 tbs cumin 1 1/4 tsp salt 1/8 cayenne- adjust up or down according to taste
cook everything until it's what you like
FOR GOD'S SAKE! ! DON'T PUT ANY BEANS IN IT! ! !

i should have added that i brown my meat really well first. just my preference

Leave out the can of tomato's and replace with a can of Rotel with Hobanero peppers. good flavor and right amount of kick for 2 lbs of meat.

Adjust the hotness with cayenne. Oregano makes it taste line spaghetti sauce. Put a can of refried beans in there when it done.

OP, are you looking for authentic chili (i.e. no beans and no tomatoes)? My wife made some killer venison chili where the sauce was essentially a blend of several chilies that had been rehydrated and blended up with onions, garlic, etc. I'll find it and post if you're interested.

my parents grew up thru the depression and told me a long time ago their original chili didn't have tomatoes most of the time because they were seasonal but during season or when they had canned tomatoes left over, those were added to the chili ... most recent recipes do contain some form of tomatoes but give it a try without some time as that is how I was raised ...
3 lbs ground or cubed 1/4 cup oil 4 cups water 1 tsp salt 8-12 garlic cloves chopped 3 oz chili powder (or dried chilis ground up) 1 tsp ground cumin 1 tsp oregano 1 tsp cayene (more or less depending on how hot you like it) 1 tsp black pepper 1 Tbl sugar 3 Tbl paprika 3 Tbl flour 6 Tbl fine ground corn meal
brown meat, add water and simmer 1-1.5 hour. in a small bowl mix spices and add to the pot and simmer for 30 minutes. in a small bowl, mix flour and corn meal, whisk flour/meal into chili stirring constantly to prevent sticking. bring mixture back to simmer until thickened.
using tomatoes, replace the water with 2 pints of canned tomatoes (not drained) ...

Three things.
1. Chili is a lot like sex. The worst I ever had was wonderful.
2. It's best to freeze your chili cuts and grind it into your stewing pot, to save on breaking it up.
3. Store bought chili powder is a combination of most of the spices you have mentioned on this thread.
4. It's best to brown your meat and simmer it a couple of hours before adding the onions, and spices.

I smoke roasts or steaks and then cube them up for chili meat. Adds awesome flavor to any recipe.
