My wife is in need of a quality set of kitchen knives so I thought I would ask around the knife guys to get a few responses. I am looking for a set with steak knives and for around 2-300 dollars. Please let me know what your opinion is and of course why they are good. I have read reviews etc. but wanted unbiased opinions if possible. Thanks.

Doc, my favorite kitchen knives are high carbon steel Old Hickory. They are as good as the stuff I make. They take and hold an edge. Of course, I hand wash, dry and set them aside to air. Then steel and strop them on occasion. Yes, they tarnish but that doesn't hurt anything.
Without a sense of urgency, nothing ever happens.

for production knives, I like the "old" version of Chicago cutlery, they would be used but are worth it.
