Ive eaten the best: pere David, eland, bison, axis, oryx, etc.
Aoudad prepared right was some of the best I've ever eaten.

You can eat an old shoe if it is prepared right. I have never eaten either one so I have no idea why I even responded to this post. Must have been the Shiner Bock talking.

take the tenderloin or backstrap and cut into a small medallion. sear in hot olive oil with sea salt and pepper on the meat for about 15 to 30 seconds per side. serve medium rare... delicious...
i shoot at least one or two young aoudad every year and eat them

I book a hunt with mulie Mike a year ago and was excited to chase a true free range trophy and collect meat as well. I booked it and was pumped then started talking to people and they all said it was trash. I quickly became upset with hunt for the plain fact I was told meat is not edible. I'm not one to hunt to chase horns so I did not feel right about it. Met with my guide Mike set me up with and had a blast harvested what I consider a giant for the area I hunted in terilingua. My guide actually told me the meat was good so I took some home and tried it. I thought it was great. Since then I've had a few younger females I collected of certain ranches trying to cut numbers and take all the meat. I cook it and everyone says they really enjoy. First off I do the same with most my animals j hunt as soon as I can get to them I bled then out best I can and let the meat soak in salted ice water changing it often for two or three days. Meat comes out great. I recommend beating with a tenderizer mallet and breads ding and making chicken fried steak. Sorry for the longer read but give the meat a shot you will like it. Just to be clear so no one thinks I was putting down my hunt with mulie Mike it was by far my favorite hunt I've ever done and have been trying to talk my military buddies to going back with me.

I know it isn't aoudad but we ate a pronghorn my dad shot in NM. Tasted no different than any other wild game we had. I can't imagine anything that wasn't properly cared for being bad.

I've tried it twice that was prepared by two guys that are very good cooks and it was nasty both times. I'll never try it again and will give away any aoudad meat that I kill in the future.

People have different taste buds. Some people enjoy eating aoudad. Most people think it tastes bad. I am in the latter group. I've had rams, ewes, and lambs cooked every which way. It's all nasty to me. I'd eat it if I were really hungry and had nothing better to eat, but life is too short to eat aoudad if you have good meat available.

Most people that will tell you Aoudad tastes bad have never eaten Aoudad. There is some kind of Ram/Goat phobia. It all taste good...
If it taste bad it is because you are a bad cook not because the meat is bad. I have had Grade A Filet that tasted like liver, because the cook that cooked the meat was really bad at cooking...

If you like goat you will probly lke auodad. I never have liked the aftertaste of goat or sheep so I did not like it

Sure you can eat it, you can eat a bull redfish too. With either one it probably wont be that good compared to others and will likely be tough

Never tried auodad but will try it if i get the chance. On that note the same can be said of duck. Tried it from several people and it always tastes like liver to me and i HATE liver! lol

Waste of time and effort to butcher an Aoudad. I know guys that have tried and not one person said it was good.

Aoudad is one of the best. Young, old, big, small. My 31" ram made into karahi gosht is one of the best game dishes I've ever eaten. I've eaten stuff out of him, a mid/high 20s" ram, and a full grown ewe, and though the big guy definitely took a while to cook: 4 hours in the pressure cooker!

Aoudad is one of the best. Young, old, big, small. My 31" ram made into karahi gosht is one of the best game dishes I've ever eaten. I've eaten stuff out of him, a mid/high 20s" ram, and a full grown ewe, and though the big guy definitely took a while to cook: 4 hours in the pressure cooker! More than likely, your aoudad's were shot on a high fenced ranch that were eating corn, protein, and alfalfa. That will definitely change the taste compared to a free range aoudad that has to eat what it can find.....

I have only tried one, it was a mature ram free range and it didn't taste good to me. I chicken fried some of the backstrap just like I would anything else. Edible sure, but had a sweet flavor to it I don't like. This is coming from someone who eats javalina so there you go.

The ram I shot wasn;t very tender. Ground it up into sausage with lots of seasoning. Not my favorite of game meat, but he sure looks great mounted on my wall!

I had backstrap from a young free range aoudad that was very good. It was chewy but good...

I killed a large mature free ranging ram last year. The meat is very mild and had a pleasant flavor. However it was the toughest meat I have ever had.

Like with anything, time and technique can make them taste good. I suggest smoking some over a long period of time at a low heat. You can also cook the roast in a crock pot for a long period of time. Like someone said above, hit the meat with the meat hammer before cooking. Remember, cooking it in water will almost always toughen it up before making it tender. It just takes time but you can make it taste great. just like with any animal, the diet and activity that animal has will change the way it taste.
