Momma's cornbread dressing

I still basically use my momma's cornbread dressing recipe. Momma would start by boiling a hen. We never had turkeys when i was growing up. She used scratch cornbread and biscuits in the early years. We needed all the calories we could get so she never skimmed of the fat. Mamma always added a lot of love tho everything she cooked. I made my stock Monday. I've been saving scratch cornbread since September. I had some hotdog buns in the freezer. I simply boil my onions and celery in the stock, then pour it over the seasoned bread crumbs, after breaking a couple of eggs in there. I'll pop it into a 400 degree oven until is golden brown on the top. Here you go.

Right there with you, but we made a fresh batch of CB with chopped onions, celery and poultry seasoning in it. Makes a great base for the dressing.
You forgot the oysters!

You forgot the oysters! I never had an oyster until I was out of college. Good idea on making your cornbread with the celery and onions. I've added poultry seasoning in the past. I'll dry my breadcrumbs in the oven. The richer the stock, the richer dressing. The dryer the breadcrumbs, the more stock you can use.

yep, I use a recipe handed down on my wife's side of the family ... her grandfather on her dad's side passed down to my mother in law, passed down to me and I am working on passing it along to my daughter. Sounds similar except I cook the onions in the dressing, both sweet onion chopped up and green onion chopped up, uses a lot of stock/broth to where its really soupy to start, stirring half way thru the cook cycle. Corn bread, biscuits and/or rolls, black pepper, red pepper, rubbed sage and a secret ingredient that takes it way beyond anyone else's dressing, a raw egg or two depending on size of batch. ... I have been sworn to secrecy though on that one ingredient.

PMK that sounds a lot like what I make except instead of biscuits and/or rolls it is crackers.
Couple things we eat with dressing instead of cranberry sauce is canned peaches with the juice added to individual taste or my Fathers fav pepper jelly

I agree with PMK on a lot of stock, and my mom used the turkey stock and a lot of eggs. I can't stand dry dressing ( might as well have corn bread). Can use chicken broth if needed and I use a lot of onion. They can have the bird just give me the dressing,giblet gravy and cranberry sauce and get out of my way.

I sauté up a huge cast iron skillet full of chopped celery and onions in butter and olive oil to add to the cornbread crumbles. It makes magic happen.
