It's a traditional Indian (Native American) stew...here's the recipe:
In a large skillet or wok, sauté: 1 diced onion 1 diced bell pepper 4 stalks of diced celery; then add 2 pound of cooked and diced chicken breast or tender pork. Heat until hot, then place mixture into large crock pot with... 1 large can (6lbs) white hominy 2 reg cans of Rotel 2 cans of Hatch green enchilada sauce 2 pkgs of Sazon seasoning mix 1 tsp of ground cumin Salt and pepper to taste Heat until hot and enjoy. You can heat on stovetop in stock pot if you're in a hurry.

Looks like a good dish for the cold outside this winter! also seems it could use some okra? or maybe thats the south in me?
