It's good. I don't like it as much as many other animals. But I wouldn't throw it away. Probably make sausage out of it or hamburger and not steaks. Maybe some jerky or buck sticks.

I shot a 6-7 year old fallow buck last October and all of the ground meat (with 10% suet) was fantastic. In my opinion, it was a tad better than the Sika, Blackbuck, Whitetail, and Axis in my freezer.

I put just about the same as Sika, maybe just a tad behind, but better than Whitetail. I do think that it's close enough to Sika that slight differences in diet will affect the ranking.

I loved it I had Axis, Sika ,Elk, Fallow, Red Deer then whitetail out of the deer species ive eaten

Good. No axis. Equal to Blackbuck and Sika and WT on my scale.
Of course, taste depends alot on diet. Corn fed fallow is GREAT. But other stuff is better.
IT'S GOOD.

I think it's a cross between venison and beef. I have killed two and both ate VERY good....steaks, burger, sausage didn't matter.

 I have tasted best and worst fallow deer meat. Diet, age and care of the meat are the main factors.

My family likes Fallow the best. We hunt A LOT and have had many different meats. We don't turn our nose up at other meat, but would hunt Fallow before others if given the chance

Last one I shot I let the meat drain over ice for 1.5 days and it was the bomb! I may like it a touch above axis...
