salt & pepper if you're going that route. A little Tony C's cajun seasoning is good too! I prefer to just buy Louisianna Fish Fry in the bag. Follow the directions on the bag, or just put it in a gallon ziploc, drop in fillets and shake it up. That's the way I roll!

I use 1 cup of flour,1 cup of corn meal, and half a cup of old bay seasoning..and it comes out great..its more of a batter than a breading..If everyone likes it spicy I put some louisiana hot sauce in the bag of fillets a couple hours befors cooking..

make a mixture of 1/2 mustard and 1/2 Tabasco marinate the fish in it for 4 hrs then coat with 1/2 corn meal and 1/2 flour fry to perfection

We usually keep it simple. Cormeal salt and pepper and hot grease. But hushpuppies are a different story. 1 Cup cornmeal 1 can creame style corn chopped oninons chopped Jalapenos cheddar cheese cut in small pieces Wife likes to add a little flour. Drop table spoon amount into hot oil. cook til golden brown.

Something that is not generally known and never publicized.
People like the idea of eating fish but generally don't like the taste. So, the fish farmers feed the fish a bland soybean based pellet to remove the fishy taste. Store bought fish is tasteless by design and they do taste tests. Something like Tofu. That's why we dope them with tartar or mixes in the corn meal.
Without a sense of urgency, nothing ever happens.

Dang I didn't even think about taking after pics! We went pretty simple last night. 2 cups corn meal, 1/2 cup flour, salt, pepper, and Tony C's. Had some french fries, and hush puppies, and pinto beans. Few friends and a few beers!
Definitely gonna try Okies hushpuppie mix next time. Never thought about marinating the fish but that mustard/tobasco sounds pretty good.

cbump, I really like to use the tony chackaries fish fry but just about any will do, usually I like to mix the fish fry in with beer, dip the fillets in the beer batter, and then role the fillets in some dry unmixed fish fry on a plate. Then you just fry em up, it works great, ps a more flavorfull beer like shiner lends a better taste than a lighter beer.

Boil them...... Take a quart of water, add 1/4 cup sugar. Drop uncoated filet's into boiling water until they float. Dip into melted butter. ummmmmmm (do not over cook)
You'll barely taste the sugar, it adds a "seafood" taste.

I do this with striper except I use crab boil......Chris if you don't want to mess with mixing your own corn mill or flour try Uncle Bucks fish fry.I like to mix a bag of the seasoned and then a bag of the spicy.

Flour mixed with salt and pepper and a little Tony's, but before you batter the fish with the flour mix, roll the fish in mustard.

I just tried this and it had no taste and kinda made me sick to my stomach. My daughter liked it though.

What kind of fish?? If you overcook it can be pretty flavorless. I do a lot of walleye this way and love it. Most of the time I do it though it's with frozen fillets. Cook until they float only and get em' out of there.

Use what ever seasoning, but what I like is to Marinate the fish in Hot sauce, Tabassco or your choice before I batter them!

Cbump, I would still use the Tony's, salt, pepper.. but instead of corn meal, try cracker meal. 
The early bird might get the worm, but the second mouse gets the cheese.

For fried fish, I do a 1/2 and 1/2 mix of saltine and Ritz crackers either in a blender or food processor. Grind until almost fine and mix in a bunch of Tony's creole, some pepper and some lemon pepper. Scramble some eggs for the egg wash and add the same seasonings to it.
For grilling, I brush olive oil on the fillets and sprinkle generously with blackened seasoning and then grill.
