Canvasbacks are actually not bad- in sausage

Your dabblers (mallards, teal, black, woodies, pintails, gadwalls, etc.) are going to be the best tasting.
Diving ducks (canvas back, mergansers, redheads, buffleheads, scaups/bluebills, etc.) generally aren't going to have as good a flavor because their diet is significantly different than dabblers.
Keep in mind that a whole lot of it is contingent on how the bird is prepared. I've found that most people that swear duck tastes like [censored] have eaten only duck that is far overcooked - in which case it won't matter if it is a diver or dabbler.

Lots of misinformation on the Can. The Can is king! On the table, too. Breasted out with the skin on, blackened on an iron skillet. Best duck you will ever have.

I'll second that, we shot a couple cans earlier this year in east texas and cooked them up separately but at the same time as gadwall and mallard, the can was gone in a hurry.

If you're advocating for that on a public forum, it's time to hang the waders up and take up golf because you're a liability and disgrace to the hunting community and its just a matter of time before you become fodder for anti-hunters. The fact that you would even put Canvasback and sausage in the same sentence tells me everything I need to know. You don't like eating duck? Then either give them to someone who does or don't hunt.

They all taste the same in gumbo. I save the teal, mallards, woodies, gadwalls and wigeon for the bbq, the rest go in the gumbo bag for the end of the season.

We've been killing ring necks and mallards only this season. We can't tell the difference in flavor. Maybe we arent cooking them right but they all taste good. Blackened in butter they taste like little steaks. I'll take your throw always!

Don't know but I would bet a duck killed up north would taste better than a duck killed on the coast or close to it

It mostly has to do with the ducks diet/cooking I've noticed some ducks on the coast smell/taste like the mud.
However, cooked rare/med rare it seems to suppress some(if not all) foul odor or taste(especially divers).

we roasted a whole drake mallard a week ago, and it was good... but I think I like teal better
Wasn't born in Texas, but I got there as fast as I could.
