Anyone have a carne guisada recipe they would share? I have tried several off the Internet, but none of them seem exactly right. I have one that gets close to what I think is "good" carne guisada, but still... something is missing.
Just thought I would see if anyone had a good one they wouldn't mind sharing. I love carne guisada, and can't find any good stuff in the Metromess. I needs me some tasty guisada!

Most Guisada recipies are cubed meat with a (gravy). So you got the meat part -- I don't have it in front of me but my Grandmothers recipe goes something like this. fine diced yellow onion- (in oil) Saute- add meat garlic-- plenty of ground comino- while meat is cooking up add enough flour to oil like making gravy -- brown flour-- not burn tomato sauce and-or diced tomatoes-- some chili powder -- small amt. you may have to add some water cover and let simmer--

Thank you! I can already tell yours has some ingredients my previous recipes were missing. I can't wait to try this. In fact... I am setting out some meat now, and I will give this a shot in the next day or two. Thanks again

Fiesta makes a good carne guisada mix if your looking for something easy. I've used theirs with beef, venison and nilgai meat, all of which turned out good. Add some good homemade tortillas and hot sauce and it makes a pretty damn good meal.

+1 on Fiesta seasoning, I ask an old lady how she made hers an she said, garlic powder, black pepper, ground cumin. Basicly it's browned cubes of meat, take the meat out and make a gravy(thin) flavored w/ the above spices and add the meat back put a lid on and let it simmer, or I cook mine in a dutch oven and stick in the oven on 250 for a couple of hours.

HD Daddy has it about right. I use whole peeled tomatoes and cut them in 1/4 and drop them in. I also use 1 sliced up bell pepper. I let simmer for about 1 hour. I then a few cut up potatos and let it simmer another 30 min. All that time lets the meet tenderize just right. Mmmm just like my abuelita used to make. Get some of those HEB uncooked tortillas and cook on skillett. Good Eats

This is the recipe that I use. It's the best that I have had so far. It's definitely worth a try. 2-3 pounds of stew meat / Cubed Venison 1 bay leaf 1 chopped green pepper 1 large chopped onion 1 tlbs of tomato paste 1 15oz can of tomatoes 1 seedless jalapeno 1 15oz can of beef broth 1/2 can of beer or 1/2 cup of red wine 4 tsp chopped fresh cilantro 2 tsp minced garlic 1/2 flour salt and pepper 2 tsp of cumin Preheat oven at 350 Put flour on a plate with salt and pepper. Coat the meat with flour mixture and brown in a heavy pot with olive oil, brown in batches and place them in a bowl. Add to the pot - onion, green pepper, jalapeno, garlic and cumin. sauté till veggies are tender. Add the tomato paste and 1 tlbs of flour and stir for one minute. Add stock, beer, tomatoes and cilantro. Cook for 20 minutes with lid partially covered. After 20 min. cover pot with foil paper and lid. Bake at 350 1 1/2 hour.
